This week the Brolga children were involved in making a deliciously refreshing drink using the mint that we have been growing in the garden. A group of children harvested the mint, washed it and then chopped it up before placing into ice trays to make “mint ice blocks.” Another group of children were responsible for slicing and then juicing the lemons.
We then added a sugar syrup and mineral water to the lemon juice for a nice twist on a lemonade drink.
If you would like to try this drink at home the recipe follows. Most of the children who tasted the drink asked for seconds!
Lemon mint drink
1 cup sugar
2 cups boiling water
Juice of 2 lemons
1/2 bottle of 1.25 L Sparkling mineral or soda water (to taste)
Mint leaves
Method:
Chop up mint leaves and then place in ice cube trays to make “mint ice”
Dissolve sugar in water make a syrup.
When ice is made and syrup cooled down, add all ingredients together.
Serve on a hot day!!
